Vinification and aging

Winemaking at the estate relies on fermentation with indigenous yeasts, without chaptalization or fining, in a non-interventionist approach. The wines are neither filtered nor excessively dosed. For "Les Vignes Goisses" 2019, Adrien Renoir opted for vinification in old barrels with gentle lees stirring, followed by several months of aging on the lees. This meticulous work brings complexity, texture, and structure to this characterful cuvée, without ever compromising the purity of the fruit.
