    a quality terroir

    The estate's vines are over 45 years old. They are spread acrossthree specific terroirs:

    • the plateau (limestone)
    • the coast (clay-limestone)
    • the foot of the slope (sandy-clay)

    The natural conditions are favorable to viticulture: naturally poor soils, excellent sunshine, natural drainage due to the slope, etc.

    The work there is entirely manual, and the team ofPavia CastleThe estate places great importance on green harvesting. After being hand-picked, the grapes are then sorted on a double sorting table. Finally, oak is used throughout the winemaking process. Fermentation takes place in tanks, and aging (which lasts between 18 and 24 months) occurs in new oak barrels.

    Gérard Perse

    a qualitative turning point

    Château Pavie owes much of its meteoric rise to its current owner,Gérard PerseIndeed, from the moment he purchased the vineyard in 1998, Gérard Perse breathed new life into it. To achieve this, he partnered with Michel Rolland and commissioned the reconstruction of the estate buildings, enlisting the architect Alberto Pinto. His efforts quickly bore fruit. In fact, critic Robert Parker awarded his 2000 vintage a perfect 100 points. Having already been classified as a Premier Grand Cru Classé B in 2006, it was in 2012 that he received the appellation's most coveted title.Saint-Émilionis finally achieved. Indeed, Château Pavie then obtains the title ofPremier Grand Cru Classé Aalongside the Angélus, Ausone and Cheval-Blanc castles.
