The vineyard of Château Pavie stretches across clay-limestone terraces, enjoying ideal sun exposure. The rich and varied soil encourages deep root systems in the vines, allowing them to fully express the terroir's richness. The vines are cultivated with complete respect for natural cycles, resulting in grapes of exceptional quality. The entire vineyard is managed with meticulous care; each plot is vinified separately to preserve the unique character of each terroir.

Owner and history

Currently, the Château Pavie is managed by Gérard Perse, a man passionate about wine and the terroir. Under his direction, the domaine has undergone a significant transformation, both in terms of wine quality and vineyard management. Gérard Perse, with his dedicated team, is committed to producing wines that reflect the soul of Saint-Émilion. His vision is clear: to combine tradition and modernity to create exceptional wines capable of competing with the world's greatest wines.

Vinification and aging

Winemaking at Château Pavie is a meticulous process, blending tradition and innovation. The grapes are harvested by hand, then carefully sorted to retain only the very best. Fermentation takes place in stainless steel tanks, allowing for precise temperature control. Aging occurs in oak barrels, some of which are new, to impart complexity and structure to the wine. This essential step refines the aromas and gives the wine its full depth, while respecting the authenticity of the terroir.
