He is experimenting with different winemaking techniques and producing wines that rival the very best.

It wasn't until 2012 that the Château's efforts were rewarded. It was also around this time that the estate's name changed. Thus, it was no longer known as "Château La Mondotte" but as"La Mondotte".Organic viticulturepracticed by the estate, was certified in 2014.

The best berries are then placed in a temperature-controlled wooden vat. Vinification lasts from 28 to 35 days. Punching down is performed at regular intervals. As with viticulture, the integrity of the grapes is respected during vinification. The young wines are then aged in French oak barrels for 18 months.
