    Owner and history

    Château La Mondotte has a relatively small vineyard covering 4.5 hectares. The vineyard is located on the eastern part of the Saint-Émilion limestone plateau. The average yield is 30 hl/ha, with vines averaging 60 years old. The land benefits from natural drainage due to its steep slope. The vineyard is cultivated using biodynamic methods, though not certified organic, and has been certified organic since 2014.

    Vinification and aging

    - Hand-harvested grapes, in crates, with a double sorting process
    - Destemming but no crushing is done
    - Vinification in temperature-controlled wooden vats for 28 days
    - Extraction by pneumatic tapping
    - Aged for an average of 18 months in 100% new barrels on fine lees. No fining.
