The Maury PDO
Maury is a protected designation of origin (AOC) located northwest of Perpignan in the Pyrénées-Orientales department . Primarily known as a naturally sweet wine, there is also a still dry red Maury. Since 2011, the Maury AOC has recognized two types of wine: sweet Maury and dry Maury .
The naturally sweet wine of Maury and its winemaking
Maury Doux refers to naturally sweet wines with a higher residual sugar content than other wines. These wines are made from its preferred grape variety, Grenache Noir . They are also called "fortified wines." Fortification occurs during the winemaking process and consists of interrupting fermentation to add distilled alcohol.
Maury Vin Doux Naturel is produced by fortification during fermentation. The musts must contain a minimum of 252 grams of sugar per liter. Fortification is carried out using a minimum of 96% ABV grape spirit. Between 5 and 10% of this spirit is added to the must before December 31st of the harvest year. This fortification process allows the wines to retain natural sugars after fermentation. The alcohol content is between 15 and 18%.
