A winemaking process that is as natural as possible

    A revival for Cahors wines

In the vineyard as in the cellar, the winemaker does everything possible to extract the best from the terroir, the vines, and the grapes. The harvest is done by hand, and the winemaking follows the same principles as in the vineyard, remaining as natural as possible. No oenological additives are used; the wine is nurtured until it reaches its full maturity, which occurs in concrete tanks, barrels, casks, or amphorae, depending on its character. If Fabien Jouves' wines are so appreciated and sought after, it is thanks to their finesse, which sets them apart from the rest.CahorsThis talented winemaker seeks freshness in his wines, even though the grapes are subjected to the intense heat of theSouthwestMission accomplished, the wines ofMas del Périéare full of freshness, but also suppleness and elegance.
