Today, he manages the estate with his team, sharing his love for viticulture and his commitment to the environment.

Vinification and aging

The vinification of Finca Dofi 2017 is carried out with meticulous care. The grapes are hand-harvested and carefully sorted to retain only the finest. After gentle destemming, fermentation takes place in concrete tanks, allowing for a pure expression of the fruit. Aging lasts approximately 14 months in oak barrels, where the wine develops its complexity while subtly integrating the woody aromas. This artisanal approach, combined with a deep respect for the terroir, results in a wine that is both powerful and elegant.
