The 2019 Testamatta boasts an intense ruby ​​color with garnet highlights. Its nose unfolds an expressive bouquet blending juicy cherry, violet, sweet spices, and a touch of minerality. On the palate, the attack is pure and silky, carried by lively freshness and chiseled tannins. The structure is elegant and dynamic, and the remarkably persistent finish leaves a floral and saline imprint that begs for another glass.

The old Sangiovese vines used for Testamatta grow on steep slopes between Fiesole and Vincigliata, at altitudes of up to 600 meters. The terroir consists of schist and sandy soils, providing excellent drainage and giving the wine tension and freshness. Rigorous organic viticulture allows the unique personality of these plots, true jewels of Tuscan winemaking heritage, to express itself fully.

Vinification and aging

At Bibi Graetz, winemaking is intuitive yet precise. Fermentation takes place in stainless steel tanks with indigenous yeasts to preserve the purity of the fruit and the varietal identity. For Testamatta 2019, aging lasts 20 months in neutral French oak barrels, so as not to mask the character of the Sangiovese. This extended maturation process brings complexity, finesse, and perfect integration of the tannins.
