    The estate has cultivated its vineyards according to biodynamic and organic farming principles since 1998. It covers approximately 110 hectares, 31 of which are planted with vines, divided into 47 parcels and representing 10 grape varieties. This veritable patchwork of vineyards was carefully planned to take advantage of the differences in soil, altitude, and exposure. The remaining hectares are covered with Mediterranean garrigue and around 500 olive trees. This diversity of terroirs allows the full potential of the grape varieties to be expressed, resulting in wines with a distinct and authentic personality.

    Owner and history

    Since 2004, it has belonged to the Albada Jelgersma family, who also own a historic estate in Bordeaux – Château Giscours, in Margaux. Their commitment to biodiversity and sustainable practices is reflected in every bottle, offering wine lovers an authentic and memorable experience.

    Vinification and aging

    Winemaking at Domaine Caiarossa is a meticulous process that begins with the hand-harvesting of grapes at optimal ripeness. After rigorous sorting, the grapes are destemmed and gently crushed. Fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature management. Aging, which varies depending on the grape variety, occurs in French oak barrels, where the wine develops its complexity and character. This care at each stage ensures a faithful expression of the terroir and the grape varieties.
