All the expertise of Maison Billecart-Salmon is showcased in this exceptional cuvée: Fermented at low temperatures and entirely vinified in oak barrels, Le Sous Bois blends grapes from vast areas of the Montagne de Reims, the Vallée de la Marne, and the Côte des Blancs (including Oger, Chouilly, and Cramant). Disgorged with a dosage of five grams per liter in the spring of 2023, after five years of aging on the lees.
