Dried pear, delicate hints of spice, dried flowers, and mint are among the many notes that adorn this 2005. In this vintage, Le Clos Saint-Hilaire is quite soft and medium-bodied, a Champagne of refinement rather than power. Disgorged at the end of 2019 with a dosage of one gram per liter, the Brut Le Clos Saint-Hilaire 2005 is the eighth edition (the sequence of releases being: 1995, 1996, 1998, 1999, 2002, 2003, 2006, and 2005; Mathieu Roland-Billecart chose to release this vintage after the 2006 to allow it more time to mature in the bottle). It is a Blanc de Noirs (9100% Pinot Noir) from the Clos de Mareuil-sur-Aÿ. Crystal-clear precision!

Vinification and aging
