    The Sublime Réserve 2009 from Maison Philipponnat is a rare and unique cuvée that admirably lives up to its name. It represents Philipponnat's "gastronomic" interpretation of Blanc de Blancs: a dry champagne (slightly more dosed than a Brut) that combines the maturity of a great sunny vintage with the finesse of Chardonnay.

    The Phillipponnat vineyards are primarily located on plots situated on the historic slopes of Mareuil-sur-Aÿ, benefiting from exceptional chalky soil. This soil, characteristic of the great Champagne crus, imparts remarkable minerality and tension to the wines. The vineyard is cultivated using sustainable practices, favoring respectful soil management and optimal grape ripeness. The Phillipponnat estate is committed to preserving biodiversity and limiting inputs to guarantee an authentic expression of the terroir.

    Vinification and aging

    The Sublime Reserve 2009 Blanc is made using a traditional approach combined with partial fermentation in oak barrels, giving the wine a refined structure and beautiful aromatic complexity. Aging on the lees for over 10 years in the cellar allows for the development of deep aromas and a smooth texture. This extended maturation ensures a fine and delicate effervescence, enhancing the tasting experience.
