The vines, averaging 30 years old, grow in soils of fine gravel mixed with windblown sands over a limestone subsoil. Yields are controlled, and the grapes are harvested by hand.

Vinification and aging

Vinification by plot and aging for 14 months in barrels (50% of which are new)
