    Owner and history

    Production area of ​​94 ha. The density of the vines is very high (from 8,300 to 10,000 vines per hectare), with an average age of 40 years for more than a quarter of them. Vineyard management with regular soil work, traditional thinning, manual leaf removal.

    Vinification and aging

    The grape harvest is done by hand with selective sorting.
    Vinification takes place in concrete and concrete/stainless steel tanks with temperature control. Fermentation is carried out at temperatures ranging from 26 to 28°C, with maceration lasting between 18 and 28 days.
    Aged in French oak barrels (fine grain and medium toast) with 50% new barrels and 50% one-year-old barrels, for a period of 15 to 18 months. Racking every 3 months by candlelight.
    Average production: 40 to 45 hL/ha
