Description

Château Peyrassol , nestled in the unspoiled heart of Provence, embodies the excellence of organic Côtes-de-Provence wines . Founded by the Knights Templar in the 13th century, this historic estate stretches across a terroir of stony hills and Mediterranean forests. Renowned for its refined rosés, Peyrassol crafts its wines from carefully selected parcels of old, low-yielding vines, guaranteeing complexity and balance. Through demanding and environmentally conscious viticulture, Château Peyrassol produces wines of great purity each year, a true reflection of the Provençal climate and meticulous winemaking expertise.

Notes and pairings

Tasting notes

The Château Peyrassol 2024 Rosé immediately captivates with its very pale, lychee-colored hue, radiating purity. The nose, refined and complex, opens with elegant aromas of white-fleshed fruit, citrus, and white flowers. On the palate, the attack is clean, delicate, and silky, supported by a lovely freshness and balanced structure. A touch of salinity on the finish completes the harmony of this wine, which is at once tender, precise, and beautifully vibrant.

Food & wine pairings

This organic rosé pairs wonderfully with sea bream ceviche, shrimp salad or grilled vegetables with herbs de Provence.

The Château Peyrassol vineyard flourishes on Triassic clay-limestone soils, enriched with pebbles that ensure excellent drainage. Cultivated organically, it benefits from virtuous practices: sowing cereals between the rows, hand-harvesting on the oldest plots, and rigorous grape selection. Located in the heart of a vast, protected, and wooded area, the vines offer remarkable plot diversity, enhanced by a consistent Mediterranean climate without excessive heat. This terroir gives the 2024 rosé its balance of aromatic intensity, freshness, and structure.

Owner and history

Château Peyrassol is passionately managed by Philippe Austruy, a visionary entrepreneur and wine connoisseur. Since acquiring the estate in 2001, he has continuously enhanced this historic terroir through ambitious investments and a transition to exemplary organic viticulture. His commitment is reflected in his dedication to quality at every stage, from vineyard to bottle. Surrounded by a team of experts, he has elevated the estate to the pinnacle of Provence rosés, combining respect for the environment, meticulous plot selection, and an authentic expression of the Mediterranean terroir.

Vinification and aging

Winemaking at Château Peyrassol relies on gentle pneumatic pressing, followed by meticulous separation of the juices. Fermentation takes place in temperature-controlled stainless steel tanks, preserving purity and aromatic precision.
For the 2024 vintage, a light post-fermentation racking allowed only the highest quality lees to be retained. These lees are then carefully worked, adding complexity, texture, and aromatic aging potential. This precise winemaking, combined with meticulous aging, results in a structured, vibrant, and refined wine, a hallmark of Peyrassol's expertise.
