    Château Simone Palette Rosé 2024 boasts an elegant and luminous pale pink hue with coppery highlights. Its complex nose reveals notes of fresh red fruit, old rose, and a touch of flint.     The Château Simone vineyard covers approximately thirty hectares nestled on the limestone slopes of Palette, facing north/northwest, sheltered from excessive heat. The soil, rich in limestone and clay scree, imparts intense minerality and a singular freshness to the wines. The vines, many of which are over a century old and cultivated using sustainable farming practices, have deep roots, drawing on the full complexity of this rare and preserved terroir.

    Vinification and aging

    Winemaking at Château Simone is characterized by a total respect for the fruit and traditional practices. The grapes are harvested by hand, fermentations take place slowly in vats, and then the wine is aged in oak casks.
