    Description

Located in Provence, between Toulon and Hyères, Clos Cibonne is an iconic estate in the Côtes-de-Provence appellation, renowned for its mastery of the rare and indigenous Tibouren grape variety. Nestled on the coastal slopes facing the Îles d'Hyères, the vineyard benefits from a unique microclimate influenced by the Mediterranean Sea, giving the wines remarkable freshness and complexity. This historic family estate perpetuates a centuries-old winemaking tradition, producing characterful wines aged in old oak casks. Clos Cibonne stands out as a singular benchmark among Provençal rosés, with an aromatic signature and aging potential rarely found in the region.

    Tasting notes

The 2023 Clos Cibonne Rosé reveals a brilliant salmon-pink color with copper highlights. The nose opens with subtle aromas of red fruit, dried flowers, and sweet spices. On the palate, the attack is supple, followed by the saline freshness typical of Tibouren, accompanied by an enveloping texture. The finish is long and complex, with a beautiful mineral tension that prolongs the elegance of this unique cuvée.

    Food & wine pairings

This rosé pairs perfectly with Mediterranean cuisine, grilled fish or anchovy pissaladière.

The Clos Cibonne vineyard stretches across south-facing schist slopes, just a stone's throw from the sea. This poor, well-drained soil, combined with the maritime influence, promotes a slow and complete ripening of Tibouren, a rare and emblematic grape variety of the estate. The vines, cultivated using sustainable farming practices, are deeply rooted in this unique terroir, imparting minerality and structure to the wines. The climate, tempered by the sea breeze, preserves a beautiful freshness, while expressing subtle aromas and great finesse. This exceptional vineyard produces age-worthy rosés with a strong Provençal character.

    Owner and history

Clos Cibonne is now managed by the Roux family, guardians of the estate for several generations. Passionate and dedicated, Olivier and Claude Roux perpetuate ancestral know-how by showcasing Tibouren, a grape variety forgotten elsewhere but elevated to new heights here. Their philosophy is based on the authentic expression of the maritime terroir, traditional winemaking, and a long-term vision focused on quality and distinction. Thanks to their commitment, Clos Cibonne is recognized as one of the few estates in Provence to produce rosés with aging potential, thus affirming its unique identity and its exacting standards in every vintage.

    Vinification and aging

Winemaking at Clos Cibonne adheres to a traditional, artisanal method: the grapes are harvested by hand, then lightly destemmed before pressing. Fermentation takes place in stainless steel tanks at low temperatures to preserve the primary aromas.
The 2023 Rosé is then aged in century-old oak casks under a veil of yeast, a rare method in Provence, which imparts a controlled, light oxidation and great aromatic complexity. This unique process ensures a subtle balance between freshness, body, and patina, typical of the Clos Cibonne identity.
