    Vinification and aging

Fermentation takes place primarily in stainless steel tanks, allowing the primary aromas to be retained. Aging on the lees for several years adds complexity and depth to the champagnes. The dosage is carefully calculated, achieving a perfect balance between acidity and sweetness, before disgorgement, which reveals the quintessence of each cuvée.
