    Vinification and aging

    Winemaking at Dagueneau is carried out with absolute respect for each vintage. Fermentation takes place in barrels that have held several wines and demi-muids, with very precise work on the lees.
    The 2021 vintage (Cuvée XXI) benefits from 12 months of aging, followed by a period of rest in tanks to harmonize the wine before bottling. This aging process allows for a refined, taut, and energetic expression of the Sauvignon Blanc.
