    Vinification and aging

    Winemaking at Domaine du Bel Air is carried out with a constant focus on preserving the authenticity of Cabernet Franc. After hand-harvesting, the grapes are destemmed and gently crushed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, allowing for optimal temperature regulation. Aging in tanks for several months allows the aromas to develop and the tannins to integrate. This minimalist process favors the pure expression of the fruit and terroir, without artifice.
