Vinification and aging

Winemaking at Domaine Faiveley is a meticulous process, blending tradition and innovation. The grapes, carefully hand-harvested, are destemmed before being fermented in temperature-controlled tanks. Aging takes place in oak barrels, some of which are new, allowing subtle aromas to develop without masking the fruit. This extended aging method, generally from 12 to 18 months, gives the wine an elegant structure and unparalleled aromatic complexity, while respecting the identity of the terroir.
