Erwan and his team work tirelessly to pass on their passion and love of wine to future generations.

Vinification and aging

The winemaking process at Domaine Faiveley is carried out with meticulous care. The grapes are harvested by hand and then carefully sorted to retain only the finest. Fermentation takes place in wooden vats, promoting a gentle extraction of tannins. Aging in oak barrels lasts several months, allowing the aromas to meld harmoniously. The estate favors a minimalist approach, avoiding excessive intervention to allow the wine to fully express itself. Each vintage is unique and reflects the expertise and passion of the winery.
