Vinification and aging

Winemaking at Domaine Faiveley is a meticulous process, respecting Burgundian traditions while incorporating modern techniques. After hand-harvesting the grapes, they are carefully destemmed and crushed. Fermentation takes place in open vats, allowing for a gentle extraction of tannins. The wine is then aged in oak barrels, some of which are renewed annually, for 12 to 18 months. This careful aging process gives the wine its complexity and depth, while preserving the identity of the terroir.
