    Vinification and aging

    Winemaking at Domaine Faiveley is a skillful blend of tradition and modern techniques. The grapes are harvested by hand, ensuring rigorous selection. After partial destemming, the berries are placed in vats for a slow fermentation, which promotes the extraction of aromas and tannins. The wine is then aged in oak barrels, some of which are new, for 12 to 14 months. This meticulous process refines the aromas and imparts a delicate oak influence, while preserving the terroir's unique character.
