    Vinification and aging

    At the estate, winemaking is carried out in a traditional and minimally interventionist way in order to preserve the authenticity of the terroir: slow pressing, precise settling, fermentation in stainless steel tanks and aging on fine lees for several months.
    For this 2018 Premier Cru Montmains vintage, the aging process lasts approximately ten months, without oak barrels, to preserve the purity of the fruit and the minerality of the terroir. The wine thus reveals great precision and a balanced structure.
