    Located at the northernmost edge of the Pommard appellation, Les Pézerolles is a Premier Cru renowned for the finesse of its wines. The plot borders the Beaune appellation and benefits from excellent southeast exposure, providing optimal sunshine for the ripening of the Pinot Noir grapes.

    Vinification and aging

    The estate uses traditional winemaking methods, favoring extended maceration to optimally extract tannins, aromas, and color. Fermentation occurs naturally with indigenous yeasts, emphasizing gentle and gradual extraction. The wine is aged for 18 to 20 months in oak barrels, with a limited proportion of new oak (approximately 10 to 20%) to preserve the fruit and natural elegance of the wine without overpowering the oak aromas. This extended aging process structures the wine while adding complexity and depth.
