    This Grand Cru comes from two vineyard parcels totaling 2.55 hectares (22% of Les Preuses). Les Preuses is a vineyard located on the right bank of Chablis, on a south-facing slope. It is renowned for its distinctive, ethereal elegance and excellent aging potential.

    The nose is very expressive, with aromas of grapefruit, crushed stone, and iodine. The palate is fresh and vibrant, despite an almost sap-like density that makes it an extraordinary wine.

    Owner and history

    The Grand Cru Les Preuses takes its name from the word "perreuse," referring to the stone that makes up its soil. This terroir rests on a base of Kimmeridgian marl and clayey limestone, a geological formation over 140 million years old, rich in minerals and marine fossils, giving the wines a unique minerality. The appellation covers 11.44 hectares, of which 2.55 hectares are cultivated by William Fèvre, offering an ideal south/southeast exposure, promoting optimal grape ripening. This terroir gives the wines exceptional longevity, developing complex and refined aromas over the years.

    Vinification and aging

    At Domaine William Fèvre, every step is carefully considered to preserve the purity of the fruit and best express the terroir. The grapes are harvested by hand, then gently pressed using a short pneumatic press. Fermentation takes place partly in 6-year-old oak barrels (50-60%), while the remainder is vinified in small stainless steel tanks to retain the wine's tension and freshness. Aging for 14 to 15 months, including 5 to 6 months on fine lees, allows for a subtle aromatic complexity while respecting the wine's mineral character.
