    Owner and history

    Terraced hills with stony soils and a rich geology. A climate that humankind has harnessed for its crops. Roussillon was bound to captivate Michel Chapoutier. He chose Latour de France as the location for his estate. Black and brown schist imparts a sun-drenched touch to the wine. Gneiss contributes minerality and freshness, creating a harmonious blend of clay and limestone. On the lands of Domaine de BILA-HAUT, three grape varieties flourish: Syrah, with its wild aromas of garrigue and spices; Grenache, so surprising; and Carignan, for mineral wines with crisp tannins. “Les Vignes de BILA-HAUT” and “Domaine de BILA-HAUT Occultum Lapidem” are the first expressions of this terroir. But Michel Chapoutier wanted to explore this place further, to capture its very essence. It took six years of reflection, observation, and analysis to bring to life a precious, rare wine. “vit”: visitare interiore terrae. Precious because of its blend. Seventy-year-old Grenache vines from a magnificent plot in the heart of the garrigue. Exuberance, richness, and complexity. Syrah grapes from vines on clay-limestone soil, slowly ripened. Powerful yet silky tannins. Finally, Syrah grapes from the finest schist terroir of the estate. Elegant aromas, refined palate. Rare, too, because it is made with audacity. Like those who gave this land its identity. The story continues in 2008, near the village of Lesquerde. High limestone cliffs, arid soils swept by the Tramontane wind… Interest in this region grows even more. A new wine is born: “L’esquerda”. Made primarily from superb Syrah and Grenache grapes grown in the finest granite terroirs on plateaus and hillsides, at an altitude of 350 meters. “L'esquerda,” meaning “the cleft in the rock” in Catalan. A character, the identity of a region. A new discovery, Mr. Chapoutier.

    Vinification and aging

    Hand-harvested. Extraction is done solely by punching down the cap during a long maceration of at least 4 weeks. Aged 100% in oak barrels for 18 months.
