    Vinification and aging

    The winemaking process for Perrier-Jouët Blanc de Blancs Champagne is delicate, with each step carefully orchestrated. The hand-harvested grapes are gently pressed to extract the juice. Fermentation takes place in stainless steel tanks to preserve the freshness of the aromas. After aging on the lees, the wine is bottled with a liqueur de tirage for the second fermentation. This process gives the Champagne its fine bubbles and elegance. Aging in the cellars lasts several years, allowing the wine to develop its full complexity.
