It pairs beautifully with flavorful Italian cured ham, seared salmon, or salmon prepared Japanese-style as tataki. With the main course, it complements a leg of milk-fed lamb or a veal fillet cooked at a low temperature. At the end of a meal, it shines perfectly with a red fruit soup enhanced with balsamic vinegar from Modena.
