This area is characterized by its higher altitude compared to the rest of the region, between 200 and 500 meters, which allows for slower warming in the spring and more significant and regular rainfall. Furthermore, the hard or soft limestone soil, typical of Minervois, provides indirect warming for the vines. These geographical and geological conditions thus allow for the production of a wine with slow maturation and an aromatic profile marked by freshness.
