      Les Fontanilles is a delight with a good prune stew, with grilled red meat, or with game. Serve at around 16°C.

      Owner and history

      This cuvée comes from a complex terroir in the Minervois region, surrounded by garrigue, pine trees, thyme, and wild rosemary. It is home to four typical grape varieties: Carignan, Cinsault, Grenache, and Syrah. The 6.75-hectare vineyard is composed of vines aged between 22 and 50 years.

      - Hand-harvested grapes
      - Total destemming according to Burgundy methods
      - Aged in barrels (50%) and in stainless steel tanks (50%)
