The Marcillac appellation, recognized as the largest in Aveyron in terms of surface area, offers red and rosé wines, marked by the character of the emblematic Fer Servadou grape variety. The red wines deliver aromas of raspberry and blackcurrant, with some spicy notes. These are wines for medium aging; approximately five years of maturation are sufficient to fully express their character. The rosés, less common than the reds, are round and fruity.
