    Vinification and aging

Winemaking at Château Les Carmes Haut-Brion is carried out with meticulous care. The grapes are harvested by hand, ensuring the selection of only the finest fruit. After delicate destemming, the berries are fermented in temperature-controlled tanks, allowing for precise temperature control to enhance aromatic expression. Aging in barrels, some of which are new, lasts approximately 12 to 18 months, allowing the wine to develop its complexity while subtly integrating oak notes. This artisanal method contributes to the elegance and depth of the wines.
