Owner and history

A 17th-century estate spanning 35 hectares and 24 plots, with 90% of its production dedicated to red wine on a clay-limestone terroir with pebbles.

Vinification and aging

Clos des Papes has been certified organic since 2007, with soil analysis every two years to select the appropriate natural amendments. To limit yields (27 hl/ha), pruning leaves only five bunches per vine. Harvesting is done by hand and only at full maturity (crucial for Grenache). The grapes are fully destemmed, and maceration is long (around twenty days) to maximize the extraction of matter and tannins. Pump-overs are performed twice daily, and the wine is aged in old oak casks (over 20 years old).
