    This wine pairs beautifully with poultry in a cream sauce, fresh pasta with truffles, scallop risotto with nutmeg, or a chicken tagine. Serve at around 10-12°C.

    Owner and history

    The Sauvignon Blanc vines are grown on a 3.5-hectare plot of vines in clay-limestone soils. The entire vineyard is cultivated organically.

    Vinification and aging

    - The grape harvest is done by hand
    - The grapes undergo skin maceration to add substance to the wine
    - Fermentation takes place in a 30-hectoliter cask
    - Stirring and aging on lees for 12 months in large oak barrels
