    This great white wine pairs perfectly with refined dishes such as grilled lobster, sea bass fillet with beurre blanc sauce, or aged cheeses like Comté. It is best served at an ideal temperature of 10 to 12°C to fully appreciate its complexity and freshness.

    Owner and history

    The estate's philosophy is simple: "a great wine always comes from great grapes." To achieve this, Domaine de Chevalier possesses in-depth knowledge of its terroir, focusing on each plot and each vine: an undeniable asset for producing great wines! The white grape varieties are 70% Sauvignon and 30% Sémillon on vines that are on average 35 years old.

    Vinification and aging

    The grapes are hand-harvested in crates with 3 to 5 passes through the vineyard depending on their ripeness. They are then slowly pressed for 3 hours, followed by settling and alcoholic fermentation in barrels. Finally, the wine is aged in barrels for 18 months with lees stirring, 35% of which are new.
