Vinification and aging

Winemaking at Domaine Pierre Girardin is carried out in accordance with Burgundian tradition. After a carefully selected, hand-harvested grape harvest, the grapes are destemmed before being placed in vats for a gentle fermentation. The wine is then aged in oak barrels, some of which are new, to add complexity while preserving the purity of the fruit. Aging lasts approximately 12 to 18 months, during which the wine develops its aromas and structure. Bottling is done unfiltered to maintain the wine's integrity. Each step is carried out with meticulous attention, reflecting the passion and expertise of the Girardin family.
