    This vintage pairs wonderfully with tuna ceviche or a beautiful sea bream. Serve at around 15°C after an hour of decanting.

    Owner and history

    The vineyard covers 38 hectares of vines cultivated biodynamically. The terroir is a blend of plots on granite hillsides.

    Vinification and aging

    - Reduced yields and manual harvesting at optimal ripeness
    - Vinification by plot in cement vats, 25% whole bunches
    - 15 to 18 days of slow fermentation with indigenous yeasts
    - Aging for 6 to 10 months in cement tanks with racking
