    Owner and history

    The earlier-ripening Merlots are planted in clay soil, while the Cabernets grow in deep gravel. The estate's philosophy is simple: "A great wine always comes from great grapes." To achieve this, Domaine de Chevalier possesses in-depth knowledge of its terroir, tailored to each plot and each vine: an undeniable asset for producing great wines! The vines are on average 35 years old.

    Vinification and aging

    The grapes are hand-harvested into crates, with sorting both in the vineyard and on a sorting table. After being transferred to temperature-controlled, gravity-fed vats, alcoholic fermentation begins. Maceration lasts approximately three weeks at a maximum temperature of 30°C. The wine is then aged in barrels for 18 months, including four months on the lees, in 35% new oak.
