    Vinification and aging

    Winemaking at Domaine Marcel Deiss is carried out with care and respect for tradition. After the grapes are hand-harvested, they are gently pressed to preserve their integrity. Fermentation takes place in oak barrels, allowing the aromas to fully develop. Aging on fine lees adds a silky texture to the wine, while retaining the freshness and vibrancy of the grape varieties. Each step is carefully considered to reveal the authenticity of the Alsatian terroir.
