      Owner and history

      Château Aydie cultivates 65 hectares of vines, 49 of which are located in the heart of Southwest France within the Madiran appellation. The hillside vines are on average 30 years old. The vines are planted in clay-limestone, clay-gravel, and clay-pebble soils. Tannat, a typical Gascon grape, is the predominant variety in this protected designation of origin.

      Vinification and aging

      The grapes are hand-harvested, then undergo a pre-fermentation cold maceration (10-12°C) for 5 days in wooden vats, followed by a longer maceration of 30 days. The wine is aged in large oak casks and barrels for 12 to 15 months. Bottling takes place after 20 months of aging.
