    Vinification and aging

    Winemaking at Château Smith Haut Lafitte is a true art. The carefully selected grapes are vinified separately according to their plot of origin. After gentle destemming, the berries are placed in vats for controlled fermentation at regulated temperatures, allowing the best of each grape variety to be extracted. Aging takes place in oak barrels, some of which are new, for 12 to 18 months.
