Vinification and aging

Winemaking at Domaine de l'Aurage is a meticulous art. The grapes are hand-harvested and carefully sorted to retain only the finest. Fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature management. Aging occurs in oak barrels, some of which are new, adding complexity and depth to the wine. The process is designed to respect the integrity of the fruit and fully express the terroir, thus creating authentic and refined wines.
