    Frédéric Pourtalié, formerly of Grange des Pères and Domaine de la Romanée-Conti, embodies the soul of Domaine de Montcalmès. His commitment to organic farming, his meticulous work in the vineyard and the cellar, and his quest for finesse have elevated Montcalmès to the pinnacle of Languedoc wines, all while maintaining a rare humility.

    Vinification and aging

    Winemaking at Domaine de Montcalmès relies on gentle practices: hand-harvesting, partial destemming, and extended maceration. Fermentation occurs naturally, without unnecessary additives. The 2022 red vintage was then aged for 24 months in Bordeaux barrels that had held one to three wines, revealing an elegant oak structure without masking the fruit expression. This extended aging process imparts depth, complexity, and aging potential.
