Controlled winemaking
Traditional techniques for exceptional wines
The winemaking process atTaupenot-Merme EstateThis reflects a philosophy focused on precision and respect for the raw material. The grapes are harvested by hand, then carefully sorted to retain only the healthiest berries. Fermentation takes place in open vats with indigenous yeasts, in order to preserve the natural expression of the terroir.
The wines are then aged in French oak barrels, with a carefully controlled proportion of new oak so as not to mask the delicate aromas of the Pinot Noir and Chardonnay.
