    Vinification and aging

    Winemaking at Château The wines of de Sales are crafted with meticulous care. The carefully selected grapes are vinified in temperature-controlled stainless steel tanks to preserve the freshness and purity of the aromas. After controlled fermentation, the wine is aged in oak barrels, some of which are renewed annually, to impart complexity and roundness. This process refines the tannins and integrates the oak aromas, while respecting the expression of the terroir. Aging lasts several months, followed by bottling without filtration to preserve the wine's full richness.
