Vinification and aging

Winemaking at Château La Clotte is characterized by meticulous attention to detail and a pursuit of excellence. The hand-harvested grapes are carefully sorted before being destemmed and crushed. Alcoholic fermentation takes place in temperature-controlled vats, preserving freshness and aromas. The wine is then aged in oak barrels, some of which are new, for 12 to 18 months. This aging method imparts complexity and depth to the wine while respecting the character of the terroir.
