Vinification and aging

THE Grand Cru "Ruchottes Chambertin" is one of the five Grand Cru vineyards of Gevrey-Chambertin. It is surrounded by the Grand Cru vineyards Mazis-Chambertin and Chambertin. Clos In Bèze, this vineyard is cultivated under a sharecropping agreement (owned by Michel Bonnefond). A third of the harvest bears the Christophe Roumier label.
